Antoine Fernex is the stockbreeder. It is him which has dealt with the part dairy products of the farm for more than 20 years (see the history). You can cross it besides on the market of the Place of the fish market, saturdays morning.
Our cows are Jersey breed, originating, as its name indicates it, of the English island of Jersey. The livestock includes/understands approximately 50 cows, distributed as follows:
- a score the dairy ones
- ten dried up and/or carrying
- about fifteen heifers (between one and three years)
- one groped of small calves.
As you see it on the photographs (see the album), these small brown cows, possibly stained of white, low, quite broad and of size are reduced compared to some charolaises well dodues
Their characteristic is to produce a very rich milk, which gives in particular this yellow color of gold to our butter in summer. Ah yes, because milk is a little different selons that the cows graze the beautiful green meadows in summer or are satisfied with the hay of winter.
In short, butter thus is produced, but also natural yoghourt and with the fruits, soft white cheese, fresh cream and of course the good munster well of on our premises, divide into volumes it of Landsberg and the square of the Vosges.
